mustardy mackerel fishcakes

for many years my default recipe for fishcakes has featured salmon as the star ingredient. flaked poached salmon mixed with mash, lemon zest, spring onions and capers – a perfect combination.

at least that’s what i thought until i made these fantastic mustardy smoked mackerel fishcakes. and having had the salmon and mackerel versions on consecutive days thsi week, salmon has definitely been bumped off its pedestal.

mustardy mackerel fishcakes (makes 6-8)

500g potatoes, diced

225g peppered smoked mackerel,

grated zest and juice of 1 lemon

1 bunch spring onions, chopped

1 heaped tablespoon wholegrain mustard

polenta, for coating the fishcakes (optional)

cook the potatoes in a large pan of boiling water, until tender. drain and mash them.

remove the skin from the mackerel fillets and flake into bite-size pieces, removing any stray bones. add this to the potato plus the lemon zest and juice, spring onions and mustard. mix well and season to taste.

shape the mixture into fishcakes and coat them with polenta (pour some onto a plate to make this easy). cover and chill for at least 30 minutes.

heat the olive oil in a frying pan. when it is hot add the fishcakes and cook for c5 minutes on each side. the first time i made this we had it with spinach, more recently i made a green bean, beetroot, goats cheese and rocket salad.

these freeze well, just allow them to defrost before cooking them.

have just made these tonight ready to eat tomorrow evening - but wonder if there was a sauce to go with them which appears in the photo (can't quite tell!)? it looks like a cream or butter sauce or something - can you divulge or suggest something that would go well? Dx

hi dom, that picture shows the fishcakes resting on some spinach which i wilted and then added some cream and nutmeg to. i don't think they particularly need a sauce.

Toby surprised me with these on Saturday night, when I was working. We had them with a big green salad, and they were absolutely delicious--the best fishcakes I've tasted, in fact. I think it was the fresh flavour of the lemon zest that really did it for me. We had some left over, and popped them in the freezer--they're coming out tonight, I think to be served with some beets and sauteed garlicy courgette.

Abs, i had a go at these myself last week. we had no spring onions, but a big bunch of chives, and i had a nostlagic longing for sweden, so a bunch of chopped dill found its way into the mixture as well. Absolutely lovely. i am now wondering about serving a single fish cake on some sauted spinnage with a poached egg on top for a weekend brunch...next time.

this is another great recipe and freezes well. I've always loved smoked mackerel but never knew what to do with it apart from make a salad.

I made these this evening, they were delicious. I served them with my favourite Nigel Slater Jerusalem artichoke and mushroom recipe and a salad. I wasn't sure about the artichoke dish as an accompaniment but it worked really well. The recipe is here if anyone's interested:
