let’s celebrate world egg day!

photo courtesy of the very talented, and equally lovely, meeta from what's for lunch honey?

10 october is world egg day. a perfect excuse, i think, to encourage food bloggers to share recipes which show just how versatile and delicious eggs are.

eggs are very important nutritionally:*

  • in proportion to their calorie content, they provide 12% of the daily value for protein and a wide variety of other nutrients such as vitamin a, b6, b12, folate, iron, phosphorus, and zinc. this is for as little as 75 calories!
  • egg protein quality is so high that scientists often use eggs as the standard by which the protein quality of other foods is measured. all the important amino acids, the building blocks of body protein, are found in an egg in the right proportions for your body’s needs.
  • two-thirds of the fat found in eggs is the healthy unsaturated kind and they contain no trans-fats.

they are also very useful in the kitchen either as the star ingredient – scrambled, poached or fried eggs make a great breakfast; soufflés are guaranteed to impress; meringues rely on egg whites and custards rely on the yolks – or as part of the bigger picture such as when they are used in cakes, pastries, sauces and other dishes.

to participate:

  • cook a dish that uses eggs
  • post about this on your blog before 3 october
  • link to this post and send me details (see below)
  • i’ll then do a summary of all the great ideas out there and post this on 10 october, world egg day.

please get involved – i’m sure many of us use eggs on a weekly basis so hopefully it won’t be too difficult to think of something suitable!

getting involved:

once you’ve posted about something that uses eggs send an email with “world egg day” in the subject line to: abby (at) eattherightstuff (dot) com by midnight, 3 october with the following information:

  • your name
  • your location
  • the name of your blog and its url
  • a link to your post
  • a copy of your main photo (if you use one)

Okay, I'm in. We eat our weight in eggs, I sometimes think. And I have just the thing for this - haven't made it before but there's always a first time right?
Just hope I remember the deadline.

Oh! I bet this post would work, but I'll have to put in the link to you still.

Mmm, eggs. Shall I count the ways that I love them? I could, but I'd get too hungry.
