10 october is world egg day. a perfect excuse, i think, to encourage food bloggers to share recipes which show just how versatile and delicious eggs are.

eggs are very important nutritionally:*

they are also very useful in the kitchen either as the star ingredient – scrambled, poached or fried eggs make a great breakfast; soufflés are guaranteed to impress; meringues rely on egg whites and custards rely on the yolks – or as part of the bigger picture such as when they are used in cakes, pastries, sauces and other dishes.

please get involved – i’m sure many of us use eggs on a weekly basis so hopefully it won’t be too difficult to think of something suitable!
