roasted vegetables with goat’s cheese and smashed tomatoes

as you’ll know, if you’re a regular reader of eat the right stuff, i am a big fan of skye gyngell’s recipes. she has a really interesting approach to layering flavours and i’m enjoying trying her recipes.
very excitingly, i have finally got round to booking to go and eat at her restaurant at petersham nurseries. i can’t wait and am incredibly excited, not least as i’ll be sharing the experience with david and my lovely pal julia. in the meantime however, i am having to satisfy myself with skye a la abby recipes.
this roasted sweet potato and purple sprouting broccoli salad with goat’s cheese and smashed tomatoes was truly delicious. david and i had it as a light supper with some leek rarebit flatbread and it was magnificent. i also think it’d be really lovely with roast chicken or simply-cooked lamb.
the dressing has a depth of flavour – anchovies, rosemary and roasted tomatoes – which is particularly delicious, and if you pop back later this week i’ll let you in on how i used up the extra that was leftover…
winter salads: roasted pear and parma ham salad with goats cheese
as you’ll know, i’m a sucker for pears in a salad. this salad combines the traditional flavours of sweet pears with salty parma ham and creamy goats cheese.
it was a lovely starter for our new year’s eve meal and is definitely something worth trying if you’re not already familiar with these flavours. it was also the perfect homage to last year’s italian holiday – ham from parma and aged aceto balsamico from modena (balsamic vinegar aged over 20 years to create a rich, sweet but slightly acidic syrup – apparently it’s also good with vanilla ice cream…).
winter salads: poached pear, toasted walnut and blue cheese
despite the cold and chilly weather i still have cravings for the vegetable freshness of salads. inevitably my summer favourite of rocket with tomatoes isn’t going to work unless i slow roast the unseasonal tomatoes to imbue them with some flavour.
however, instead of trying to recreate spring and summer favourites it’s much easier to create wintery salads full of seasonal flavours.
pears, walnuts and cheese are a favourite combination and this version, with its red-wine poached pears, toasted nuts and rich gorgonzola (or a creamy goats cheese if you prefer) make this a bit special.
chicory, feta and pomegranate salad

chicory is a great winter vegetable that doesn’t taste at all wintry. which means that when you need a break from all those roasted roots and sautéed cabbage dishes you have a perfect seasonal substitute.
this salad was incredible easy to make and is a nice alternative to the more traditional chicory salad with blue cheese and toasted walnuts.
pea and bean salad with smoked scamorza and mint
the skye gyngell roasted red onions i made last week have been adding delight to a number of dishes recently, most notably a puy lentil dish which we topped with roasted salmon and this gorgeous salad, where the fresh green taste of peas and beans worked beautifully with the smoked cheese and sweet onions.
incredibly easy to make we had this with roasted chicken thighs that had been rubbed with herbs and salt. leftovers were demolished as packed lunches the following day.
